Red Velvet Swirl Brownies Recipe! The Perfect Valentine's Day Treat!

Can you believe it? Valentine’s Day is tomorrow! Do you have anything planned to surprise your special someone?

If you’re looking to really show your loved ones how much you care, whip them up a delicious batch of red velvet swirl brownies! This is the perfect Valentine’s Day treat!

Ingredients
1 tablespoon unsalted butter (for pan)
Red Velvet Brownie Layer:
1 stick unsalted butter
1 cup sugar
1 teaspoon vanilla extract
¼ cup cocoa powder
1 pinch of salt
1 tablespoon red food coloring
1 teaspoon vinegar
2 eggs
¾ cup all-purpose flour
1/3 cup chopped toasted walnuts
Cream cheese layer:
8 ounces cream cheese, softened
¼ cup sugar
1 egg
1/8 teaspoon vanilla extract

Directions
Preheat your oven to 350 degrees. Butter the bottom of an 8 by 8 baking pan. To start the brownie layer, in a saucepan melt the butter. Remove the butter to a large bowl and add sugar, vanilla, cocoa powder, salt, food coloring, and vinegar – in that order, mixing between additions. Whisk the eggs in a small bowl and stir into the cocoa mix. Fold in the flour until lightly combined. Stir in the walnuts and pour the batter into the prepared baking pan. Set aside ¼ cup of the batter for the top.

For the cream cheese layer, blend together the cream cheese, sugar, egg and vanilla in a bowl. Gently spread the cream cheese layer on top of the brownie batter in the pan. Dollop the remaining brownie batter over cream cheese layer. Using the tip of a knife, drag the tip through the cream cheese mixture to create a swirl pattern. Bake the brownies for 30 minutes. Allow brownies to cool completely before cutting!

Super Bowl 47 is Quickly Approaching!

Can you guess what the most watched sporting event is each and every year? If you guessed the Super Bowl, you’re correct!

For the first time in the history of the NFL, both head coaches in the Super Bowl are brothers.  Both Jim and John Harbaugh have done an incredible job in turning their programs around, and obviously having enough success to lead them to the Super Bowl.  Jim Harbaugh has really turned the San Francisco 49ers around, and turned them into a force in the NFL. The Ravens have always been a defensive force but John Harbaugh has turned them into a very well rounded team with a dangerous running game in Ray Rice.  This game could come down to which-ever kicker is having a better day.  The Ravens have a rookie kicker who can be inconsistent at times and the 49ers have David Akers a veteran kicker following one of his best years as been inconsistent at best this year.  Both teams have impeccable defenses with unpredictable offenses.

If you've ever hosted a party, you probably know that preparing food for your event and serving it take up a lot of time. So, this holiday season, we’re here to provide you with some simple recipes so you can spend less time in the kitchen and more time mingling with your guests!

Here is a delicious and easy recipe, courtesy of foodnetwork.com, for a classic appetizer – hot artichoke dip! This appetizer is a crowd favorite and one the kids will be sure to love as well! 

Ingredients
  • 1 block of cream cheese, softened
  • 2 cups mayonnaise
  • 1 can artichoke hearts, drained and chopped
  • 2 green onions, sliced thin
  • ½ cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper


Directions
Preheat your over to 350 degrees. In a large mixing bowl, beat the cream cheese with a mixer until texture is smooth. Then add in the mayonnaise, mix until smooth. Add all of the remaining ingredients and stir together until combined.
Transfer the mixture to a baking dish and bake for 30 to 40 minutes until the top is golden brown and dip is bubbling. Serve with your choice of crackers, toasted bread, veggies or tortilla chips.

Holiday Party Recipe That's Sure to be a HIT!

Here is a delicious recipe for blondies, courtesy of foodnetwork.com! Blondies are a classic dessert that 
everyone is sure to love!

Ingredients
  • Cooking spray
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 5 1/3 tablespoons (1/3 cup) unsalted butter at room temperature
  • 3 ounces cream cheese
  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • ½ cup chopped hazelnuts
  • ¼ cup sweetened shredded coconut
  • ½ cup dark chocolate chips or chunks


Directions
Preheat your oven to 350 degrees. Mist an 8-inch square glass baking dish with cooking spray. Whisk together the flour, baking powder, baking soda and salt in a mixing bowl.

Beat the butter and cream cheese in a large bowl with a mixer at medium speed until fluffy. Add the brown sugar and beat 3 to 4 more minutes. Beat in the egg and vanilla. Add the flour mixture and mix on low speed until just combined. Fold in the hazelnuts, coconut and chocolate chips. Spread the batter in the prepared pan and bake! Insert a toothpick in the center of the pan until it comes out clean. Bake for about 35-40 minutes. Let blondies cool for at least 20 minutes before cutting.

Chocolate Fudge
Melt ½ a stick of butter, 4 cups of marshmallows, 1 cup cream, 2 cups sugar and a pinch of salt in a saucepan. Let it simmer, by stirring for 5 minutes.
Off the heat, stir in 3 cups chocolate chips until smooth.  Spread into a foil-lined 9 by 13 inch pan. Let it cool and cut into squares. Wrap up your cooled fudge in cellophane and holiday ribbon and you’re all set!

Coconut-Almond Truffles
Combine ¾ cup almond butter, ½ cup each confectioners’ sugar and unsweetened shredded coconut, 3 tablespoons cocoa powder and ½ teaspoon of vanilla – work into dough.
Roll into balls, and then roll in shredded coconut. Chill until ready to package or serve!

Cinnamon Marshmallows (kids will love this one)
Drizzle marshmallows with melted chocolate and sprinkle with cinnamon sugar. Chill until firm. Wrap up your marshmallows and give them as a gift with hot chocolate! These marshmallows are a perfect touch to a cup of hot cocoa on a cold winter night!

Hurricane Sandy Cancels Many Halloween Festivities

Hurricane Sandy devastated the east coast earlier this week, causing Halloween festivities to be cancelled everywhere.  In NYC, many parts of lower Manhattan are still without power. 

The annual Village Halloween Parade has been canceled for the first time in its 39 year history. Some people are not giving up on Halloween so quickly, many are rescheduling their parties and events and others are just fighting through the unfortunate events and continuing on as planned.  

50,000 costumed patrons are expected in Philadelphia on Wednesday for events ending with a spectacular fireworks display over Salem Harbor.  Hurricane sandy may have put a damper on the events of the Halloween season, but it has not damaged the spirit of the holiday.

Spooky Halloween Desserts!

Halloween is right around the corner! This is a great time to plan a party for you and your friends! You’re going to need spooky desserts to go with the theme of Halloween! This year, plan on making Pull Apart Graveyard Cupcakes, they’ll be sure to frighten guests of all ages! 

These spooky treats are sure to be a hit at the party! Although these cupcakes look like a cake, this graveyard consists of individual cupcakes! This makes it a self-serve party option! Also, you can make your graveyard as big or little as seen fit for the amount of guests at your party!

Ingredients:
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon kosher salt
½ cup grape jelly
1 cup granulated sugar
4 large eggs, at room temperature
12 ounces (3 sticks) unsalted butter, melted
2 tablespoons pure vanilla extract
2/3 cup milk

Frosting:
10 ounces (2 ½ sticks) unsalted butter, at room temperature
¼ teaspoon kosher salt
3 ½ cups confectioners’ sugar, spooned and leveled
3 tablespoons milk
10 chocolate sandwich cookies, coarsely crushed

Decorations:
15 large white marshmallows
¼ cup finely crushed chocolate sandwich cookies (about 3 cookies)
1 tablespoon black or green decorating sugar
One 6.4 ounce tube black decorating icing, tips
5 oval shaped vanilla and chocolate sandwhich cookies
One 7 ounce tube marzipan
3 round lollipops, wrapped
¼ cup decorating sugar
One 6.4 ounce tube green decorating icing, tips
Seven 8-inch pieces black licorice

Directions:
For the cupcakes: Preheat the oven to 350 degrees F. Line two 12-cup standard muffin tins with paper cupcake liners.
Whisk together the flour, baking powder and salt in a medium bowl. Warm the grape jelly in the microwave until loosened, 20 to 30 seconds, and whisk until smooth. Set aside.
Beat together the sugar and eggs in another medium bowl with an electric mixer until light and foamy, about 2 minutes. While beating, gradually pour in the butter and then the vanilla.
While mixing slowly, add half the dry ingredients and then all of the milk. Follow with the rest of the dry ingredients, taking care not to over mix the batter.
Remove 2 cups of the batter and stir in the grape jelly. Evenly fill the liners about two-thirds full, alternating with yellow and grape batter.
Bake until a tester inserted in the center of the cupcakes comes out clean and the tops spring back lightly to the touch, 20 to 22 minutes. Place the pan on a rack to cool for 10 minutes, and then remove the cupcakes to the rack to cool completely, about 1 hour.
For the frosting: Beat the butter and salt in a large bowl until fluffy and combined. Gradually beat in the confectioners' sugar until smooth and fluffy. Beat in the milk one tablespoon at a time until the frosting has a nice spreadable consistency. Add the crushed cookies and continue to beat until any large chunks are crushed to smaller bits and the frosting has a speckled, greyish look.
For the decorations: Arrange the cupcakes in 4 rows on a large serving plate or cutting board. Fit a marshmallow between each cupcake, 5 marshmallows per row, to fill in the gaps between the cupcakes. Spread the frosting over the whole rectangle so it looks like one cake. Sprinkle with the cookie crumbs and black decorating sugar.
To make the tombstones: Use the black decorating icing and a small round tip to write "RIP" or other one-word epitaphs on the top half of the oval sandwich cookies and stick into the cupcakes randomly around the graveyard.
To make the ghosts: Remove two-thirds of the tube of marzipan and place between 2 sheets of wax paper or parchment. Roll about 1/8-inch thick and cut into 3 rounds using a 4-inch biscuit cutter. You may need to gather and reroll the scraps for all 3 rounds. Drape over the wrapped lollipops and stick into the cupcakes around the tombstone. Using the black decorating icing and the same round tip, dot eyes and a mouth on the ghosts.
To make the pumpkins and leaves: Divide the remaining marzipan into 4 small pieces and roll each into a ball. Roll in the orange sugar until coated and place around the graveyard. Use the black icing to pipe a small stem. Fit the tube of green decorating icing with a leaf or ribbon tip to dot bits of green grass poking through the dirt around the graveyard and pumpkins.
To make a border: Use 6 pieces of the licorice, trimming to fit, to make a border around the cake, leaving the middle of the front side open. Bend the seventh piece into an upside down "U" and stick into 2 cupcakes in the front to make an arched gateway.
Cook's Note: If your decorating icing does not come with tips, you can squeeze some icing into a small plastic bag or piping bag fitted with a small round metal tip or a small metal leaf or ribbon tip.

How To Carve a Pumpkin!

October is a great month to celebrate the fall season and the many fun activities that come along with it! Halloween will be here before you know it! So, it’s only a matter of time before the kids start asking to shop for costumes and carve pumpkins!

Are you unsure of how to carve a pumpkin? Here’s a “How to” on carving pumpkins, courtesy of marthastewart.com!

Cut a hole in the Pumpkin- The first step in this process is to hollow out the pumpkin. Begin by using a keyhole saw to cut the hole. If you’re considering using a candle inside the pumpkin for illumination, you can cut the hole in the top of the pumpkin. If you’re using electric lights, cut the hole in the bottom or side so you can hide the electric cord.

Scoop out the Flesh- Using a plastic scraper or fleshing tool, scoop out the flesh, pulp and seeds of the pumpkin.

Transfer your Design- Create a design for your pumpkin either using a pumpkin template or drawing your own! Trace the design by poking holes with a sharp awl, needle tool or T-pin.

Carve the Features- Remove the carving template and carve along the pattern with a mini saw or carving tool. There are many ways to get creative with patterns and design while carving!

Illuminate your Pumpkin- An easy way to light up your pumpkin is by wrapping a strand of lights around a glass jar and secure them with tape. Cut a hole in the pumpkin to fit the cord and place the jar inside!

Baltimore Rallies Past New England!

Sunday night football ended with a 27-yard field goal that just slipped inside the upright.  Each team had their opinion on whether it was good or not.  The officials determined that it was inside the upright as it sailed just feet above the post giving the Ravens 31 points over the Patriots’ 30 in a rematch of last year’s AFC championship game.  Their last meeting was a close game as well, in which the patriots squeaked by the 
Ravens by 3 points in another hard fought game that advanced them to the Super Bowl. 

One of the biggest stories of this game was that fact that the Raven were led by Torrey Smith who had six catches for 127 yards and two touchdowns.  Smith was suffering from the loss of his 19-year-old brother in a motorcycle accident less than 24 hours before the kickoff.  He dedicated his performance to his brother and did not disappoint.  He said that he was supported by his family, friends and his teammates and they gave him the strength to decide to play Sunday night and produce his best performance of the year so far.  

The Ravens battled back from an early Patriots lead, led also by Joe Flacco who threw 28 for 39 with 382 yards and 3 touchdown passes.  Finally the game ended with the field goal kicked by Justin Tucker as time expired.  Sunday night football was one of the most exciting games of the weekend even though there was three overtime finishes.  It was a hard nosed battle that was reminiscent of old school football from years ago!

Tips to Prepare for Footballs Tailgating Season!

Poorly planned tailgating parties have the potential to become uncomfortable outdoor picnics on concrete.  If planned correctly, they can be just as entertaining as the game itself.  Whether it’s a pregame tailgate to get excited for the game or a post game tailgate to celebrate the victory of your favorite team, it is a great way to bring your family and friends together outdoors! Chef and author Tres Hatch has a few suggestions to help you throw a successful outdoor tailgate


The most important part of a good tailgate is a good combination of the right foods and drinks.  Whether you are bundled up in mittens or sweating in the back of a pickup truck, you’ll enjoy yourself much more if you’re not doing a balancing act between your food, drink and utensils.  Most tailgates do not include tables so its very important to cook food that is easy to eat and not messy.  Another fun suggestion is combining your drink and plate.  Cut a hole in a foam plate and stick it on top of your bottle, eat from the plate and remove it to take a sip.  Step two is to get your friends into the game by surrounding them with the team colors.  Party stores sell plates, napkins, cups and utensils in a variety of colors, and this is a good way to show team spirit.  Don’t let your tailgate go silent; provide some music to really get the party started!

You also want to plan for the weather, check the forecasts up to the minute.  Provide cold water and drinks for hot whether, for cold whether fill thermoses with hot cider or something to warm the belly.  Tip number five is keeping hot food hot and cold food cold.  If one of you meals is hot chili or bratwurst, try preheating them at home then covering them with a lid and wrapping them in a towel, then transport them in a box or cooler, they will stay hot for hours.  Equally as challenging is keeping lettuce cold and crispy.  To avoid wilted greens try wrapping frozen gel packs in aluminum foil and placing them under the greens, this also works for potato salad and keeping condiments cold.  Finally try to change things up and try something new. Try rolling a tortilla, flatbread, or a pita into a cone shape then wrap it in aluminum foil to avoid dripping. After that, fill it with stew, chili, bratwurst and sauerkraut, or another hot entrĂ©e of your choice!

The most important part to throwing a successful tailgate party is keeping your guests happy.  These tips are designed to do exactly that while getting them excited and involved with the game.  So show your favorite team a little support by bringing your friends together for some food, drinks and a good time.

Delicious Summer Cocktail Recipes!

Although the summer is winding down, there is still time to throw one last great cocktail party with all your adult friends and family! Sorry kids!

Here are some delicious cocktail recipes that are a perfect fit for your summer event. Let us know what you think of these recipes on our Facebook page, linked HERE!

Agave Margarita
  • 1 oz. Don Julio Bianco Tequila
  • 0.5 oz. Grand Marnier
  • 0.5 oz. Fresh Lime Juice
  • 1 tsp. of Agave Nectar
  • 1 Lime Wheel

Directions: Combine agave nectar, lime juice, Grand Marnier and Don Julio Bianco tequila. Shake with ice and strain into an ice filled rocks glass and garnish with a lime wheel.

Captain Silver Sunrise
  • 1.5 oz. Captain Morgan Silver Spiced Rum
  • 1 oz. Pineapple Juice
  • 1 oz. Cranberry Juice
  • 1 oz. Orange Juice

Directions: Add Captain Morgan Silver Spiced Rum, pineapple juice, cranberry juice and orange juice into a tall highball glass filled with ice. Mix well!

Paradise Martini
  • 1.5 oz. Smirnoff Pomegranate Flavored Vodka
  • 1 Pineapple Wedge
  • 2 oz. Pineapple Juice
  • 1 Splash of Cranberry Juice

Directions: Combine all ingredients into a cocktail shaker. Shake, strain and serve in a martini glass. Garnish the glass with a pineapple wedge or cherry!
