Baltimore Rallies Past New England!

Sunday night football ended with a 27-yard field goal that just slipped inside the upright.  Each team had their opinion on whether it was good or not.  The officials determined that it was inside the upright as it sailed just feet above the post giving the Ravens 31 points over the Patriots’ 30 in a rematch of last year’s AFC championship game.  Their last meeting was a close game as well, in which the patriots squeaked by the 
Ravens by 3 points in another hard fought game that advanced them to the Super Bowl. 

One of the biggest stories of this game was that fact that the Raven were led by Torrey Smith who had six catches for 127 yards and two touchdowns.  Smith was suffering from the loss of his 19-year-old brother in a motorcycle accident less than 24 hours before the kickoff.  He dedicated his performance to his brother and did not disappoint.  He said that he was supported by his family, friends and his teammates and they gave him the strength to decide to play Sunday night and produce his best performance of the year so far.  

The Ravens battled back from an early Patriots lead, led also by Joe Flacco who threw 28 for 39 with 382 yards and 3 touchdown passes.  Finally the game ended with the field goal kicked by Justin Tucker as time expired.  Sunday night football was one of the most exciting games of the weekend even though there was three overtime finishes.  It was a hard nosed battle that was reminiscent of old school football from years ago!

Tips to Prepare for Footballs Tailgating Season!

Poorly planned tailgating parties have the potential to become uncomfortable outdoor picnics on concrete.  If planned correctly, they can be just as entertaining as the game itself.  Whether it’s a pregame tailgate to get excited for the game or a post game tailgate to celebrate the victory of your favorite team, it is a great way to bring your family and friends together outdoors! Chef and author Tres Hatch has a few suggestions to help you throw a successful outdoor tailgate


The most important part of a good tailgate is a good combination of the right foods and drinks.  Whether you are bundled up in mittens or sweating in the back of a pickup truck, you’ll enjoy yourself much more if you’re not doing a balancing act between your food, drink and utensils.  Most tailgates do not include tables so its very important to cook food that is easy to eat and not messy.  Another fun suggestion is combining your drink and plate.  Cut a hole in a foam plate and stick it on top of your bottle, eat from the plate and remove it to take a sip.  Step two is to get your friends into the game by surrounding them with the team colors.  Party stores sell plates, napkins, cups and utensils in a variety of colors, and this is a good way to show team spirit.  Don’t let your tailgate go silent; provide some music to really get the party started!

You also want to plan for the weather, check the forecasts up to the minute.  Provide cold water and drinks for hot whether, for cold whether fill thermoses with hot cider or something to warm the belly.  Tip number five is keeping hot food hot and cold food cold.  If one of you meals is hot chili or bratwurst, try preheating them at home then covering them with a lid and wrapping them in a towel, then transport them in a box or cooler, they will stay hot for hours.  Equally as challenging is keeping lettuce cold and crispy.  To avoid wilted greens try wrapping frozen gel packs in aluminum foil and placing them under the greens, this also works for potato salad and keeping condiments cold.  Finally try to change things up and try something new. Try rolling a tortilla, flatbread, or a pita into a cone shape then wrap it in aluminum foil to avoid dripping. After that, fill it with stew, chili, bratwurst and sauerkraut, or another hot entrĂ©e of your choice!

The most important part to throwing a successful tailgate party is keeping your guests happy.  These tips are designed to do exactly that while getting them excited and involved with the game.  So show your favorite team a little support by bringing your friends together for some food, drinks and a good time.

Monday Night Football Recipes!

With football season back in action, there is no better time than to throw a Monday Night Football party with your friends and family! This is a great way to extend the summer and cheer on your favorite football team!

Perfect Guacamole

Directions: Pile 1/4 cup chopped onion, 1 to 3 chopped serrano chiles, 3/4 cup torn cilantro and a big pinch of kosher salt on a cutting board. Chop, then mash into a paste with the flat side of a large knife. Transfer to a bowl, add 3 diced avocados and mash with a wooden spoon until combined but still chunky. Stir in 1 medium dicedtomato and season with salt. Top with more tomato, cilantro and onion.

Chorizo and Shrimp Quesadillas
Ingredients:
2 ripe Haas avocados
1 lime, juiced
A couple pinches salt
1/4 cup sour cream, 3 rounded tablespoonfuls
2 chipotle peppers in adobo, available in cans on specialty food aisle in Mexican section
1/2 pound chorizo sausage, sliced thin on an angle
1 tablespoon extra virgin olive oil, plus some for drizzling
1 clove garlic, cracked away from skin and crushed
12 large shrimp, peeled and deveined, tails removed, ask for easy-peels at fish counter
Salt and freshly ground black pepper
4 (12- inch) flour tortillas
1/2 pound, 2 cups, shredded pepper Jack cheese

Directions
Cut avocados all the way around with a sharp knife. Scoop out the pit, then spoon avocado flesh away from skin into a food processor. Add the juice of 1 lime, a couple of pinches salt, sour cream and chipotles in adobo. Pulse guacamole until smooth. Transfer to a serving bowl.
Heat a 12-inch nonstick skillet over medium high heat. Brown chorizo 2 to 3 minutes, then remove from pan. Add oil, garlic, then shrimp. Season shrimp with salt and pepper and cook shrimp until pink, 2 or 3 minutes. Transfer shrimp to a cutting board and coarsely chop.
Add a drizzle of oil to the pan and a large tortilla. Cook tortilla 30 seconds, then turn. Cover 1/2 of the tortilla with a couple of handfuls of cheese. Arrange a layer of chorizo and shrimp over the cheese and fold tortilla over. Press down gently with a spatula and cook tortilla a minute or so on each side to melt cheese and crisp. Remove quesadilla to large cutting board and repeat with remaining ingredients. Cut each quesadilla into 5 wedges and transfer to plates with your spatula. Top wedges of quesadillas with liberal amounts of smoky guacamole.

Lucky 7 Layer Dip
Ingredients
1 (15-ounce) can refried beans
2 tablespoons hot sauce
Extra-virgin olive oil, for drizzling
4 scallions, cut into 1 inch pieces
1 (16 to 18 ounce) jar green chili or tomatillo salsa
2 tablespoons chopped cilantro, a palm full, chopped
1 (15-ounce) can black beans
2 teaspoons ground cumin, 2/3 palm full
1 (16 to 18 ounce) jar chipotle salsa
2 cups sour cream
1 lime, zested and juiced
2 ripe avocados
2 cloves garlic, finely chopped
1 lemon, juiced
1 jalapeno, seeded and finely chopped
Salt
2 plum tomatoes, diced
Pimiento stuffed jumbo Spanish olives, chopped
Tortilla chips, buy 2 sacks in 2 different colors/varieties

Directions
Heat refried beans in small nonstick pan over medium heat and season with hot sauce. Transfer the beans to a small, deep casserole dish. Scrape pan clean with rubber spatula and return to heat.
Add a little extra-virgin olive oil to the pan and raise heat to high. When the oil smokes, add the scallions and sear them, 2 to 3 minutes. Add green salsa to scallions and heat through. Add cilantro, remove salsa from heat, and layer on top of the beans.
Return the same pan to the stove, lower heat to medium and add black beans, heat through and season with cumin, layer on top of the green salsa.
Top the black beans with a layer of chipotle salsa. Mix sour cream the lime zest and juice and spread on top of the chipotle salsa.
Combine the meat of 2 ripe avocados with garlic, lemon juice, jalapeno and salt to form a chunky guacamole. Top the salsa with guacamole. Garnish the dip with the final layer of diced tomatoes and sliced olives.
